St Louis Style Pork Ribs. 4 hours on @BigGreenEgg w charcoal & soaked cherry wood chips.
I made rub w paprika, dry mustard, coriander, allspice, clove, chile powder, brown sugar, s+p. rubbed well on top only. Smoked & turned 1x 3 hours in. finish wBBQ sauce for last 30 min.Enjoy!

Apple Crostata. It’s an easy pie crust dough, sliced apples & autumnal spices lead by my fave, cinnamon. supporting players: nutmeg, ginger, allspice, clove &brown sugar. My desserts have a rustic look no matter what. A Crostata is supposed to feel that way so it’s my go-to move!
Sometimes when I want an egg & it’s not with a side of bacon or a roll with sausage &cheese, I make pizza dough & “sauce” & use it as a vehicle for a perfectly fried egg!
This one has tomato sauce, basil, mozzarella, Calabrian Chiles & Parmigiano. one day rise on dough. #wecook
Fresh Cherry Tomato/EVOO Sauce. Half tomatoes, heat olive oil & drop tomatoes in. Let them burst & create a tomato/olive oil sauce, Add crushed garlic, anchovies, pepper flakes, cook 2 min. add splash pasta water, pat unsalted butter, grated parm, torn basil, s+p to taste #wecook

Shrimp. Arugula Pesto.
Pesto: Arugula, basil, pine nuts, garlic parmigiano, olive oil. S+P.
Shrimp seasoned with s+p +paprika cooked in pan w oil, ~3 minutes per side until shrimp turn opaque. Scattered arugula leaves on plate, splashed lemon juice +EVOO #wecook@foodnetwork
Musssels, tomato, white wine, shallots, tarragon... and oh yeah butter.
Throw it all in a big pot, cover it, fire on high... As soon as the mussels open they’re done.
Spill them into giant bowl with all of the broth and serve with toasted crusty bread ..
